This is our first harvest featuring a coffee from Faver Ninco and his family. This pink bourbon has a bright sweet acidity that the variety has become well known for, reminding us of pink lemonade with a pronoucned floral finish.

We taste sweet pink lemonade, fresh raspberries, and delicate white florals. This is a loud and defined pink bourbon with a beautiful citric acidity. This coffee has a light body and a beautiful floral finish.

About The Producer
Faver’s coffee journey began about 25 years ago, when he learned everything he knows about coffee production from his father and neighbors. About six years ago, he became very interested in coffee varieties and specialty coffee. His four children also were involved in this process, and now they all participate in the farm´s production; each of them owns their own coffee plants and carefully selects the varieties they want to grow to contribute to the family’s economy and their own.
Processing
Hand-picked, perfectly ripe cherries are fermented for 24-30 hours. The pulp is then removed and a second anaerobic fermentation lasting 60-80 hours follows. The coffee is then washed once, leaving a thin layer of mucilage to enhance the body and fruitiness.
Variety
Pink Bourbon is a variety primarily grown in Huila. Though newer than other varietals, it has quickly grown in popularity for its bright, sweet, and aromatic profiles. It is now known to be an Ethiopian Landrace.
