In the cup
In the cup we get aromas of lemon-lime soda, and juicy stone fruits like peach with a vibrant and mouthwatering acidity. This coffee is tropical with a long sweet finish and a light body.
About The Producer
Keramo sits at an altitude of 2,360 masl, which helps produce higher-density seeds with a heavy concentration of smaller screen sizes—an indicator of the slower maturation times that occur at extreme altitudes. Keramo site has awarded Daye Bensa with prestigious Cup of Excellence awards in 2020, 2021 and 2022. This has built a reputation in the region for producing some of the best coffees in all of Ethiopia.
Processing
Hand-picked at peak ripeness. Coffee is then floated to further remove any unwanted defects. It is then de-pulped on the day of harvest with a wet-fermented for 36-72 hours and then dried on raised beds.
Variety
Landrace is an umbrella term that refers to all the coffee varietals endemic to Ethiopia. As believed to be the birthplace of coffee, the trees have been growing and cross-breeding for centuries in this country. As a result, today, there are numerous sub-varietals with some common genetics but slightly different behaviour and taste. Relatively recently, in the last few decades, there has been an organized effort to research and identify different endemic varietals growing in Ethiopia by name, disease resilience and yield production.
