This is our first year working with Wilmer. Wilmer is apart of the Monkaaba group in Huila, Colombia. This coffee is a combination of Pink Bourbon and Tabi and offers a bright citric profile with juicy acidity.

We taste juicy citrus like grapefruit and tangerine, with a bright citric acidity. This coffee has a raspberry like sweetness and delicate florals that reminds us of black tea. It has a long bright finish with a light body.

Wilmer, despite a lifetime of working as a coffee grower and coffee picker, was largly unable to access the specialty market until becoming connected with Monkaaba. Monkaaba is an initiative in San Agustin led by Esnaider Ortega. The goal is to assist other growers in the area not only to find a better market for their coffee, one that pays a solid price, but also to invest in the knowledge and skill of producers in a way that ensures their future success.

This is a traditional washed coffee where cherries are floated and then left 24 hours. Once depulped, the seeds are left for 54 hours before being dried on raised beds for 20 days.

A combination of Tabi and Pink Bourbon: Pink Bourbon is a variety primarily grown in Huila, Colombia and while newer, it has quickly grown in popularity for its bright, sweet and aromatic profiles. It is now known to be an Ethiopian Landrace but further information is not available at this time. Tabi is a cross between Bourbon, Typica, and Timor Hybrid. Tabi was developed as a part of the research to develop a variety that is disease resistant while maintaining good cup quality. It provides producers with an excellent disease-resistant choice while also having a very high cup quality potential.
