In the cup we get a juicy profile of purple fruits like blackberries, stonefruits like peach and apricot, a bright grapefruit acidity and delicate florals. This coffee big yet delicate, with a complexity that has us infatuated. It has a long finish of lemon candy and grapefruit. Fresh crop Ethiopia is here, and we're honoured to be one of the first to share it with you. 

What is Hydro Honey? It is a newer hybrid process where after picking and sorting the coffee cherries, they dry for 48 hours on shaded drying beds, similar to a traditional natural process, but for a shorter timeframe. Once this is finished they place the cherries in a tank filled with water for a 48-hour fermentation process (24 hours aerobic and 24 hours anaerobic). After the 48-hour fermentation period, cherries are pulped and placed on shaded drying beds for approximately 25 days, similar to a honey process. Hydro Honey can also be seen as a hybrid between a Natural and Honey, where a special preparation is carried out between initial drying and honey drying. 

Located in the Gedeo zone of the Gedeb district, Danche is one of the finest coffee producing areas within the famous Gedeb Woreda. Known for its dense layered semi forest vegetation structure encompassing banana trees as well as shade grown coffee trees, Danche is a great example of best coffee growing acro ecology. SNAP Specialty Coffee built their new wet mill in 2019 in a small hamlet called Chelbesa with in the Danche Village with the hope of reaching out to purchasing exclusively red cherries from the nearby farmers in Danche Village. Their ambition became a reality after completion of the project. The fermentation tanks of the wet mill were built by ceramic which will help bring clarity in the coffee that they process as well as help fasten the fermentation through heat inside the ceramic.
