We've been working with Eyder for almost as long as September has roasted coffee and this is yet another lot we are proud to featured that he's produced. This special lot was produced in partnership with the Cabildo Aponte community. In the cup we find intensely sweet stone fruits, and juicy lime and jasmine florals.

In the cup
In the cup we taste juicy stone fruits like nectarines and plums, bright lime-aid, and florals reminiscent of jasmine. This coffee has a silky body and a sparkling juicy finish.

Eyder Martinez is a dear friend who works as the biochemical engineer for El Paraiso.
Processing
This coffee is traditionally washed after selective sorting and depulping. The coffee was collectively produced by the Cabildo Aponte.
Variety
Caturra is a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil sometime between 1915 and 1918. For decades, it was one of the most economically important coffees in Central America, to the extent that it was often used (and sometimes still is) and a "benchmark" against which new cultivars are tested. In Colombia, Caturra was thought to represent nearly half of the country's production until a government-sponsored program beginning in 2008 incentivized the renovation of over three billion coffee trees with the leaf-rust-resistant Castillo variety.
