About The Producer
He named his farm “El Turpial” after the bird that sings every day on the land. For Emerson, its song symbolizes a “call to struggle”—a reminder of the journey he’s undertaken. One of his most notable achievements at El Turpial was a graft that allowed Geisha trees to survive the challenging conditions. Initially, the trees couldn’t withstand the high altitude and sharp temperature changes, with their leaves burning and withering away. Emerson decided to graft Geisha with Caturra, using the latter’s strong root system while preserving Geisha’s unique sensory characteristics in the cup.
Processing
Ripe, red cherries are harvested, selected through a thorough process to ensure that only the best fruit moves on to the next stage. The cherries are then carefully fermented in a controlled anaerobic environment using GrainPro bags for 6 to 7 days. During fermentation, the cherry juices are circulated periodically to maintain consistent flavour profiles between all of the beans. After fermentation is complete, the cherries are dried on raised beds and exposed to direct sunlight for 20 to 25 days.
Variety
The Laurina coffee variety is a rare and distinctive plant known for its low caffeine content and rich, complex flavour profile. This variety is a mutation of the Bourbon variety, but contains about 50-60% less caffeine than regular Arabica coffee. These coffee plants are smaller than most, which allows for easier management and harvest. Laurina plants also thrive in high altitudes, making El Turpial a prime spot for successful growth and the resulting complex flavours we experience in this stellar lot from Emerson.
