This is our first time featuring a coffee from Liliana Ramírez and her farm in the Anzá region of Colombia. This coffee reminds us of juicy pears, pomegranate, and bright citrus. This is a very clean and juicy Chiroso.

About The Producer
Liliana Ramírez tends to approximately 1,000 Chiroso trees on her small farm, Finca El Yolombo. The scale of her operation places her amongst Colombia's smallest specialty coffee producers, yet her coffee consistently demonstrates the quality that comes from careful, hands-on farming. Working at this scale allows Liliana to maintain exceptional quality control throughout the production process. Her partnership with Desarolladores, the exporter who discovered her farm and supports her with best practices, has been crucial in bringing her exceptional Chiroso to the international market. This collaboration ensures that small-scale producers like Liliana can compete alongside larger estates whilst maintaining the traditional methods that make their coffee special.
Processing
Coffees are processed by what is called, "Cochadas", a process where every 4-7 days a new picking is de-pulped into previous days’ and homogenized. The “Cochadas” process is a traditional practice in small-scale farms. Liliana only has around 1.000 coffee trees. She harvests every 2 weeks and usually during three days. She harvests Monday, pulps after floating in the afternoon, harvests Tuesday, pulps after floating, blends it with Monday’s harvest, and harvests Wednesday, pulps after floating and washes all three harvest days on Thursday. On the final day, the coffee is washed and prepared for drying. The majority of this lot is fermented in water, creating a cleaner profile without excess funk or undesired attributes vs other methods of fermentation.
Variety
Chiroso is a newer variety being grown primarily in the region of Antioquia, Colombia. While we've only been aware of Chiroso for a few years, it is becoming very popular in Colombia because of it's quality potential. The variety has been genetically identified as an Ethiopian Landrace, but we unfortunately cannot get any more specific than that at this time.
