Our third time featuring Los Capachos from our dear friend Eyder (Andres) Martinez. Andres once worked for El Paraiso as their biochemical engineer and coffee processor. Over the past couple years we have grown a good relationship with Eyder working directly with him and this beautiful Pink Bourbon is the third coffee we've featured from his family farm Los Capachos, this time featuring a semi-washed Pink Bourbon. This is an Extra-light roast variant of Los Capachos.

In the cup
We get a lively, vibrant profile of honeydew melon, pink jolly ranchers and blackberries. Reminding us of our favourite anaerobic washed processed coffees, this coffee has a sweetness that reminds us of honeydews and a juicy citric acidity. This coffee is round in body with a long sweet finish.

About The Producer
Los Capachos is a farm located in Florencia, in South of Cauca department, close to Nariño. It is a land well known for the mineral soils that produce unique terroirs to the coffees. The quality of this coffee is enhanced by organic handling and protection of the soil with natives species that provides shadow and good nutrients asimilation to the coffee. Produced by Eyder Martinez, a dear friend, this lot was grown and cared for by his grandfather who grows Geisha, Pink Bourbon, and Sidra.
Processing
After picking and sorting, this coffee was held in cherry for a 72 hour aerobic fermentation, followed by a traditional washed process and dried in a solar dryer for an average of 8 days.
Variety
Pink Bourbon is a variety primarily grown in Huila, Colombia and while newer, it has quickly grown in popularity for its bright, sweet and aromatic profiles. It is now known to be an Ethiopian Landrace but further information is not available at this time.
