This is our fifth time featuring a coffee that Jorge Rojas has processed. This particular microlot is special: Jorge's neighbor, Edward Giraldo farmed the cherries while Jorge executed the intricate processing. This Typica is sweet, jammy and very limited.

In the cup
In the cup we taste juicy blackberries, sweet plums, and vibrant blue raspberry. This coffee has a medium body and a lingering sweet finish.

About The Producer
Jorge Rojas is a fourth-generation coffee producer and Edward Giraldo is Jorge's neighbor. Jorge worked on Edward's farm in his early years, establishing a relationship that would continue on for many years. Both produce organic coffee without using any agrochemicals.
Processing
Together, Edward and Jorge decided to process this typica with a two-step fermentation, both in tanks and anaerobically. The cherries first ferment for 60 hours in their whole form to highlight their natural sweetness and fruitiness. The second fermentation happens right after in the cherry mucilage to help accentuate the bright acidity. The cherries are then washed dried for 14 days on raised beds in Jorge's micro-mill.
Variety
Typica has a high susceptibility to diseases and a lower overall yield (20-30% fewer coffee cherries than Bourbon). This variety is renowned for its exceptional cup quality, characterized by a clean and complex profile with a typically sweet taste and broad range of flavor notes. However, it requires cultivation at high altitudes, preferably above 1600 MASL.
