This is our second year working with Gildardo Lopez. His coffees are well known and highly praised. This particular lot is the 5th place Copa de Oro 2024 coffee. We are honoured and thrilled to showcase this spectacular lot. This is an extra-light roast variant of our light roast of Gildardo's Pink Bourbon. We recommend extra-light roasts to experienced brewers only, willing to wait up to forty days post roast for best brewing results. Extra-light roasts sacrifice sweetness and initial intensity for clarity.

Gildardo's farm, El Calamar, is high in the mountains of Paicol on the western edge of Huila. In the recent years, his family has won numerous awards in the local cup competitions and, year over year, their Pink Bourbon impresses the most demanding of clients. In recent months, they have also planted a small amount of Gesha. Gildardo is a husband to Yolanda Bolaños and a father to four kids ranging in age from 20-25.

Gildardo hand-picks the coffee cherries at their peak ripeness. The selected cherries are floated to remove any defects. They are then fermented for 30 hours, de-pulped, and then dry-fermented in parchment for an additional 48 hours. The cherries are washed and dried on raised beds for 20-25 days.

Pink Bourbon is a variety primarily grown in Huila, Colombia, and while newer, it has quickly grown in popularity for its bright, sweet, and aromatic profiles. It is now known to be an Ethiopian Landrace variety.
