producer iconAbout The Producer

Los Patios is the Processing and Research Facility of one of our importers, The Coffee Quest. De-pulped cherries are bought and brought in from various producers all over the region of Huila. This facility exists to develop replicable coffee processes that excel in a brew. Los Patios began as a vision to elevate cup quality from producers that face processing challenges such as volatility, climate change, and inadequate farm infrastructure.

This field blend lot undergoes a process called Solsticio. In this process, there are multiple fermentation stages prior to washing. Before the cherries arrive at Los Patios, the selected cherries are fermented aerobically for 12 hours and then de-pulped. A solution is prepared ahead of time and added to the coffee in its final stage of fermentation. This fermentation is mixed, with an initial aerobic phase for 5 hours and an anaerobic phase for another 12 hours. The coffee is then dried for 12-16 days with regular rotation to ensure an even drying.

While this is a field blend, the vast majority of this coffee is comprised of Castillo. Castillo is a hybrid variety, a cross between Caturra and Timor Robusta. This variety was carefully created for its resistance to leaf rust and can be planted in high density, resulting in generous crop yields.
