Notes: Clean fragrance, very sweet, soft citric acidity (Mandarin), clean with round body, prolonged Plum flavour. This coffee is imported by Republica who are Salvadorians turned Canadain and in direct relationship, and in many cases family or friends with the farmer.
Story: Finca El Molino is located in the Ahuachapan department of El Salvador. Guadalupe is a section of the El Molino Farm, (also called a Tablon). The Bourbon/Pacas varietals give this coffee the distinctively sweet coffees El Salvador is known for. The perfectly selected cherries at max sugar content being dried under the sun with constant movement, is what makes this coffee so clean. unique, and tropical.This lot is dried right on the farm, on clay patios and raised beds, under the sun. The added elevation while drying can create more complex and interesting flavours in the coffee. The Bourbon trees on this farm (like many others in the region) can vary between 40-80 of age. Making this largely constient of very old genetic Bourbon.
