We've been working with Diego Bermudez for years now, but this is our second time featuring a coffee from the Hachi Coffee Project. This Panama Geisha is exceptionally produced with precision, and in his words, "achieving vibrant clarity, enhanced florality, and structure without overripe notes — a method that lets nature speak, but with a scientist’s timing." This coffee is very limited.

Diego is an absolute genius when it comes to methodology in coffee processing. He is well known for his advanced anaerobic washing and thermal shock processing techniques. This inverted processing is a new experimentation that is taking him, and the Hachi Coffee Project, to new heights.

process iconProcessing

This innovative processing turns conventional fermentation sequencing on its head. The Inverted Process begins with whole cherry fermentation in a tailored culture medium before depulping and washing. This first stage preserves the integrity of the fruit’s skin and mucilage. The cherries ferment for 24 hours in a liquid solution enriched with water, enzymes, and selected yeast strains. The additional composites are chosen for their capacity to enhance specific floral, fruity, or structural attributes. This reverse sequencing offers many biochemical advantages. The intact cherry is a semi-permeable barrier, enabling slow infusion of the liquid solution while retaining the coffee’s natural precursors within the fruit. After this carefully timed phase is complete, the cherries are depulped and immediately washed to prevent over-fermentation. The coffee is then moved to a dark room for dehumidification, where it will dry gradually away from UV light and oxidation risk. The Inverted Process is a tribute to Hachi’s philosophy—using biotechnology not to overpower the coffee, but it to guide it toward its most elegant expression.

This variety was originally collected from coffee forests in Ethiopia in the 1930s. From there, it was sent to the Lyamungu research station in Tanzania, and then brought to Centro Agronómico Tropical de Investigación y Enseñanza (CATIE) in Central America in 1953, where it was logged as accession T2722. It was distributed throughout Panama via CATIE in the 1960s after it had been recognized for tolerance to coffee leaf rust. However, the plant's branches were brittle and not favored by farmers so it was not widely planted. The coffee came to prominence in 2005 when the Peterson family of Boquete, Panama, entered it into the "Best of Panama" competition and auction. It received exceptionally high marks and broke the then-record for green coffee auction prices, selling for over $20/pound.There is significant confusion about Geisha because there are multiple genetically distinct plant types that have been referred to as Geisha, many of which share similar geographic origins in Ethiopia. Recent genetic diversity analyses conducted by World Coffee Research confirm that Panamanian Geisha descendent from T2722 is distinct and uniform. It is associated with extremely high cup quality when the plants are managed well at high altitude, and is known for its delicate floral, jasmine, and peach-like aromas.
